Sieves

Have you ever wondered how to get that cake lighter or your pastry crispier?  A sieve.  In cooperate some air in to your ingredients especially flours and voila, instantly changed.  Larger sieves are there for breaking up clumps, smaller perfect for keeping the pulp out of you freshly reamed juice.  For the finishing touch of your fresh baked goods get a fine sieve for that final dusting of icing sugar.
