They are very large stainless steel saucepans that are perfect for making jams, jellies, chutney’s and marmalades in large batch quantities. They are wider on top and high sided which is very important. High sides are important when you have to time your rolling boil. A roiling boil is where the boiling liquid gains height to the point of almost boiling over and cannot be stirred down. The high side’s keeps contents safely contained. Using a normal saucepan means that you have the danger of a messy boil over or you have to divide your batch into smaller quantities and repeat the process more often.
